ANOTHER COLE SLAW RECIPE

OK, it's Friday and I'm a week behind schedule. Before I plan tomorrows football dinner I need to talk about last Saturday.

It was Ball State vs Western Kentucky 


and my Florida Gators and Tennessee.



But first, a cute doggie picture.

For today's game, let's continue on our low carb quest with a new and different Cole Slaw recipe to go along with the wings we are doing in the deep fryer.

Here is our cast of characters:




NAPPA CABBAGE ( 6 cups, chopped)

2 LARGE CARROTS
¼ CUP OF RICE WINE VINEGAR (UNSEASONED)
¼ CUP SUGAR (OR SUB)
2 TBL VEG OIL (I USED CRISCO)
¼ TSP CELERY SEED
¼ TSP GROUND BLACK PEPPER
1 TSP SALT
¼ CUP CHOPPED PARSLEY LEAVES

Combine Vinegar, oil, celery seed, & pepper in a container
Put in the freezer for 15 to 30 minutes
 Don't forget to close the door

It is beer time yet?


Shred 6 cups of cabbage
Toss the cabbage with sugar and 1 tsp salt

Micro wave the cabbage on high for 60 seconds
Stir and do it again
Stir and do it again

Put micro waved cabbage in a salad spinner and spin


Clean and grate the carrots
 BE CAREFUL !!!!



Toss oil mixture on the cabbage, stir and refrigerate.

We have done wings here before, so I won't rehash the details.

Simply: Put about 10 wings in the deep fryer pre heated to 375. Cook them.






Repeat for 10 more, or as many as you want.

So what is the deal with all these teams from Kentucky? Western beat Ball State 28-20 in a real good game.

And my Gators surprised the hell out of me by winning easily, 47 to 21 (makes life a lot easier when the opposing team gives you SIX turnovers.)

So here are the results. 




 Obviously, the wings were good. I made mine plain while Penny poured Hooter Sauce over hers.



The cole slaw was “different.” And that's all I have to say about that.

PIZZA CASSEROLE (LOW CARB)




It's football time again in Florida, and today our Gators take on  
Colorado State (I call it a pre season game) They got a cool two million to get embarrassed by the home team. It was part of the deal Florida made to hire Jim McElwain away from Colorado State a few years ago.




Well, he's no longer around, but the game must go on.


And my Ball State Cardinals take on the Hoosiers of Indiana.


 Should be a great day for college football.


Ball State plays first, but the game is not on TV in my area, so we watched a bit of the Kentucky game while we prepared our football feast.



Continuing with our low carb theme, we made a low carb Pizza casserole with a nice salad.



Don't worry, you can substitute regular pasta.



So here we go.

(AMOUNTS TO TASTE)



HALF AN ONION

SAUSAGE


PEPPERONI 

GREEN PEPPERS 


ONE OR TWO CANS MUSHROOMS

¼ CUP OF GRATED PARMESAN

1 JAR OF SAUCE (YOUR CHOICE)


SPRINKLE OF GRAND DIAMOND (MILD)


SPRINKLE OF HERBS


BUNCH OF MOZZARELLA


A CHOPPED PEPPER


2 bags of MIRACLE NOODLES (OR REGULAR PASTA)





LET'S GO......



SLICE THE PEPPERONI


SAUTE SAUSAGE


CHOP PEPPER



DRAIN AND RINSE NOODLES



MICRO WAVE 1 MINUTE THEN RINSE

MICRO WAVE 1 MINUTE THEN RINSE

MICRO WAVE 1 MINUTE THEN RINSE



DRAIN SAUSAGE ON A PAPER TOWEL





CHOP ONIONS 


CHOP GREEN PEPPERS

DRAIN MUSHROOMS

GRATE THE PARMESAN


NOW WE ARE "READY FOR SOME ASSEMBLY"

 No, not that kind of assembly



SPRAY THE CASSEROLE DISH WITH SOME PAM



ADD NOODLES AND JAR OF SAUCE





SPRINKLE ON THE PARM



ADD SAUSAGE




ADD PEPPERS, ONIONS, MUSHROOMS, PEPPERONI, AND THE CHEESE. EVERYBODY IN THE POOL












SPRINKLE TOP WITH GRAND DIAMOND, AND ITALIAN HERB MIX





COVER AND REFRIGERATE




WHEN THE SECOND QUARTER STARTS, UNCOVER DISH AND PLACE IN 350 DEGREE FOR 30- 45 MINUTES.





GET TEMPERATURE GOOD AND HOT(AND SERVE)



It looks good, and tastes good too. The Miracle Noodles are a bit on the 'chewy side' but is a good low carb substitute.



So the Cardinals decided not to send the same team that went to South Bend the week before. They got killed 38 to 10.



Better news on the Gator side as they man handled the High School team from Colorado 48 to 18.



Next up is Tennessee up in Knoxville. God how I hate the damn Rock Top song.




Look for my Gators to be 0 for 2 in the SEC at the end of the night.
