SWISS STEAK WITH MUSHROOMS AND ONIONS

Hello, Foodie Friends

 
Today is the annual slug fest in Jacksonville between the Florida Gators and the Georgia Bulldogs.
 
 
The game and associated rivalry have been known as "the World's Largest Outdoor Cocktail Party", a nickname first coined in the 1950s by Bill Kastelz, sports editor for The Florida Times-Union 


And what a game it is EVERY year. Georgia may have the ugliest mascot around, but the also have one hell of a good football team.


So, today we are looking for a half time meal that's quick and easy, AND TASTES GOOD.

Got you covered as we again turn to the old SLOW COOKER.

So let's get up early and get to the cooking part of our program.

IT'S SWISS STEAK WITH MUSHROOMS AND ONIONS.

As you know, I LOVE MUSHROOMS. Add some nice white onions and I am good to go. 

Here is what you'll need for today


 3 TBL Vegetable oil (Divided 2 TBL – 1 TBL)

1 ½ LBS White Mushrooms, cleaned, trimmed and sliced
 

Salt & Pepper

2 Medium size White Onions, Halves and sliced thin




1 tsp Dried Thyme
1 ½ tsp Sweet Paprika
¼ CUP AP Flour
¾ Cup Dry Sherry

 NO, not 'that' Sherry

¾ CUP HOME MADE Chicken Broth
                (Your are making HOME MADE, Right?)

6 (6-8 Ounce) Beef Blade Steaks ¾ to 1 inch thick

Yeah, I like Salt & Pepper

¼ Cup Heavy Cream

2 TBL minced Fresh Parsley

Heat 1 TBL Oil in a 12 inch skillet over medium Hugh heat until shimmering.

Add the Mushrooms and ¼ tsp Salt, cover, and cook until softened. (About 5 min)


 Uncover and continue to cook until mushrooms are dry and browned (5 to 10 minutes)

Transfer to slow cooker


Heat remaining 2 TBL oil in skillet (Medium High) until shimmering, then add your Onions, Thyme, and Paprika. 

 
Cook until onions are softened and slightly browned. (8-10MIN)


  
Stir in the flour and cook for 1 minute.



SLOWLY whisk in the broth and Sherry. Use your spoon to scrape up any browned bits. Smooth out any lumps and transfer to the slow cooker
  


Season the steaks with salt and pepper, and nestle into slow cooker. Cover and cook until beef is tender (9-11 hours on LOW) I did about 8 hours)

 
Now you can have adult beverages. Wait a sec, it's only 8 AM !!!  


Just kidding, let's play with the cute puppy instead.

 "Grover, you are supposed to run through it, NOT sleep in it"


While the steaks cook in the juices you may want to turn them occasionally.


When the steaks are done and tender, transfer them to a platter and loosely cover with foil. Let the slow cooker liquid settle for 5 minutes then remove fat from surface using a large spoon. (I did not have to do this, as the amount of fat was nil) 

Stir in the cream and parsley and season with salt and pepper to taste.



Spoon one cup of sauce over the steaks and serve with the remaining sauce in a bowl.


Don't forget the SALAD !!

 And the "Refreshing" Adult Beverage

I can not tell you how good this was. And it was LOW CARB to boot. 

WINNER WINNER BLADE STEAK DINNER. 

(I watch way too much Diners Drive Ins and Dives) 


As far as the football went, it was kind of like the earth without ART....... It was "EH"



My Gators lost to a good team with some help from the guys in stripes. (Now we know how South Carolina felt)

Hey, it could be worse, we could have the train wreck that F.S.U. has.


Willie didn't last 2 seasons in Tallahassee but don't feel bad for him. He walks away with about 18 million bucks. See what's wrong with college sports ????

So regardless of wins or losses, your day will be complete with an adult beverage, cute puppy and a GREAT meal.


Now, on to next week and Vanderbilt. (Their quarterback is a grad transfer from my Alma Mater - Ball State. But don't worry, he couldn't win there either.
