It's a BEAUTIFUL day here in Central Florida and it's
another day of SEC Football !!!!
My Gators try to bounce back from last weeks loss to Georgia to take on Vanderbilt. I was hoping to see Riley Neal at QB for the Commodores. He's a grad transfer from my Alma Mater - Ball State. But he is on concussion protocol, so he can't play.
Then it's on to the game of the year L.S.U. and Alabama.
I'm not a big L.S.U. fan
But I think Alabama has won enough. Even if my wife did go to school with little Nickie.
It should be a great game.
But I digress.
Game day meal this week is Over The Top Chili and we are turning to the best outdoor grill ever made..... THE BIG GREEN EGG.

This is SO EASY, You'll thank me later.
After researching a bit on the Big Green Egg chat group, we came up with this:
OVER THE TOP CHILI RECIPE
Set up your GRILL
Heat to 250 degrees
This is why the Big Green Egg works so well. You can maintain the temp within a few degrees. I can not do that on my Gas Grill. And I haven't used the "other" Charcoal type grill in 30 years.
For the Charcoal, we chose something new that was recommended on the chat group.
Our local ACE Hardware carried this so we decided to try it out.
We used it for a couple of evening meals and liked it. It's not smokey and heats well and easily.
Let's get to work.

Let's move on while the grill heats up.
2 TBL VEG Oil in a Cast Iron Pot
3 Onions (Diced)
4 Cloves of Garlic (Chopped)
1 Nice RED Sweet Pepper (Chopped)
1 - 14.5 Ounce Can of Diced Fire
Roasted Tomatoes. (If you do not like big pieces of ma-ter, run this
through your blender)
1 - 15 Ounce Can Black Soy Beans
Rinsed (This is for us LOW CARBERS- You can use Red Kidney Beans
1 - 4 Ounce can of HATCH GREEN CHILIES
(Chopped)
Heat the oil over Medium High heat,
then saute your Onions and Peppers
When Sauteed, add the Garlic and cook
for about a minute.
Add the Tomatoes, Chilies, ¼ Cup Chili
Powder, 1 TBL Ground Cumin, ½ tsp Ground Oregano, and 1 tsp Salt and 1 tsp Ground Fresh
Pepper
Continue to cook.
Place your meat (1 ½ to 2 LB Ground
Chuck) into a bowl.
Add your TACO Seasoning (2 PKG Ortega)
and mix with your hands.
Form it into a nice BALL of meat.
Turning back to your POT, ADD 6 OZ of
Beer.
Take Pot out to the Big Green Egg and
place it on your plate setter.
Place a rack on top of the Pot.
Put your meat ball on top of the rack.
Close the lid
Cook for 2 ½ hours, maintaining your
heat at 250 degrees.
Time for a beer and SEC Football.
After 2 ½ hours, remove the meat ball
and put on a cookie sheet.
Chop the meat to desires texture.
CUTTING board should have been bigger !!!
Add the meat to the pot.
Add another 6 oz of Beer (Always SAVE the beer)
Cover and cook for 2 more hours !!!!
Have another beer. More football to come.
This turned out G R E A T !!!
We added some grill cheese samwitches to go with our meal. Penny had some LOW CARB bread she wanted to use. After 4 months of NO bread, they were GREAT !!!

My Gators bounced back in a big way, spanking Vanderbilt 56-0
And L.S.U. / Alabama turned into a GREAT one !!!
All in all, it was a great day. Good food, beer, and SEC Football.
