GAME DAY CHICKEN

Welcome back to Kill It, Cut It Up, and Cook It.

This week we are literally throwing together some quick Chicken in the oven.

As you know, for the last year, I've been rebuilding our kitchen cabinets. And this past weekend was the tear out of the Upper Units and installation of the NEW ones.

Luck was with me as the Gators played yet another night game.. (In Kentucky) Ball State was not on TV in our area, so it gave me most of the day to work on our project

But it meant that I needed something quick and easy for dinner. That means either the Slow Cooker or the Oven.

I chose the Oven this week.

But first, let's install some cabinets. (You can't have beer until AFTER you are done.

 We hated those White things

In the truck waiting to go to Habitat For Humanity

New ones are in (Less the doors and the Vent)

NOW can I have a beer ????

Damn that was good. I think I'll have another one

Once a radio geek, always a radio geek.

OK, it's time for CHICKEN

But first, let's pet the cute doggie.

Put 1 cup of All Purpose Flour in a Brown Paper Bag.

Add 1 TBL of Seasoning.
 (I used Carolyn's Grand Diamond - Mild)

You can add more or less, depending on your taste. After all, you're the COOK.

Put the Chicken on paper plates. Then One Piece At A Time, place it in the bag with the Seasoning and Flour.  SHAKE to Coat.

If you want, you can sing that Johnny Cash song as you SHAKE.

In a baking dish, add some oil and about 1/2 stick of butter, place in a 350 degree oven and melt. (Do Not BURN)

Place your chicken in the melted butter and oil as you get them coated with flour and seasoning

Add some Salt & Pepper

Bake at 350 for 20 minutes.

After 20 minutes, turn the chicken over and raise the oven temp to 400 degrees.

Bake for another 20 minutes. Don't forget to reset your timer thingy.

Don't those look G R E A T ?

We added a salad and some Greenie Beans.

It made for a great dinner, even if the kitchen WAS a disaster. And we didn't have to EAT OUT!!!!!

Our new MOTTO:

So Football time came. Gators and Kentucky. The Gators played poorly UNTIL disaster hit late in the third. Our stating quarterback was carted off the field with a broken ankle. Done for the year.

Get well soon, Felipe Franks

We were behind 21-10 going into the fourth, with a back up quarterback who hasn't started a game since he was a freshman in High School.

This unknown quarterback (Kyle Trask) lead a 19 point surge to win the game !!!

So it was a good day for Florida Football. U.C.F. also won. Florida Atlantic beat my Ball State Cardinals.

AND F.S.U. LOST AGAIN..

So, next week, Tennessee comes to the swamp. And FSU ???
Who ??

Live Ling and Prosper -- AND EAT AT HOME !!!!!

CHICKEN AND RICE SOUP WITH LOOSE MEAT SANDWITCH FOR GAME DAY

OK, It's Game Day and hotter than.....

How hot?? You ask ??

So hot that here in Florida, they're making cookies in the car !!!

But, we have air conditioning and a big screen TV and it's Football Game Day.

And beer !!!

Today Ball State takes on Fordham in a 2 PM game and Florida opens their home season with U.T. Martin.

On the menu today is a Low Carb Chicken and Rice Soup, along with a Low Carb loose meat Ham Sandwitch. (Sort of)

We made something similar a couple of years ago, but this time will be a bit different.

These are so damn easy to make, we're going to watch Football first, then have dinner before the second game.

CHIRP CHIRP !!!

It was a run away !!

 Let's get cooking !!!!!

BUT WAIT !!!!!  We need a cute doggie !!

and a beer

Now we can cook.....

CHICKEN AND RICE - LOW CARB

1 Rotisserie CHICKEN – CUT UP

2 CUPS CHICKEN BROTH

½ ONION – CHOPPED
3 CELERY STALKS - CHOPPED
1 CARROT – CHOPPED

¼ TSP THYME
½ TSP CELERY SEED
¼ TSP MARJORAM
¼ CUP CHOPPED PARSLEY

Saute the Onion, Celery and Carrots in some EVOO

Add the Broth and all the Spices

Stir, then add the Chicken

Heat well, but DO NOT Boil.

Place Miracle Rice in a drainer and RINSE

When rinsed, put in a bowl and Microwave on High for 1 min.
RINSE
When rinsed, Microwave on High for 1 min.
RINSE
When rinsed, Microwave on High for 1 min.
RINSE

Add some HOT water and let sit for 3 to 4 minutes
Drain and add to the Soup

Salt and Pepper to taste

Simmer on LOW for 30-40 minutes

Done !!!

While the Soup is simmering, let's make the samwitches

But first.....

Moving on

LOOSE MEAT SANDWITCH – LOW CARB
with shaved ham & SAUCE

1/2 POUND SHAVED HAM
1/4 CUP ONION
1/2 CUP GREEN PEPPER
1 CLOVE GARLIC (CHOPPED FINE)

ENOUGH MARINARA SAUCE TO COAT THE HAM. (BUT NOT TOO MUCH)

Saute Onions and Peppers in pan with EVOO

When translucent, add the Garlic and simmer about 60 seconds
Add the meat (I break it up, you do NOT want a big lump)

Add the Sauce and stir

Heat mixture to desired temperature.

Salt and pepper to taste

If you get it too thin, you can add more meat.
If you get it too thick, you can add some broth or water or better yet MORE SAUCE

On a baking pan lined with NO STICK foil, place two pieces of LOW CARB bread

Cover with your meat mixture.

Cover with Mozzarella Cheese.

Place under your broiler for a couple of minutes (WATCH IT CAREFULLY)

When Cheese is nicely melted and starting to brown up, it is READY.

Serve with a refreshing Adult Beverage

This was so simple and tasted GREAT. I am becoming a fan of the MIRACLE NOODLES, and RICE.

If you are not Low Carbing, you could use reguar noodles in the soup and a toasted bun for the samdwitch.

Either way works well.

SO its on to FOOTBALL

It was another Run Away !!!

All in all, a great way to spend a HOT day in Central Florida. Good football, Good food and Good air conditioning !!!!

FULL DISCLOSURE : SO I am in the kitchen cooking all this, and at the last second Penny says. "Why don't you throw some cheese on those samwitches?"

See, I did marry a genius.

Live long and prosper !!!

ROTISSERIE CHICKEN

Neither rain, snow or a damn hurricane staring at us will deter us from a good meal and COLLEGE FOOTBALL.

It's WEEK ONE of College Football. (They called Florida & Miami WEEK ZERO)

Since Florida doesn't play until next week, today it's my alma mater BALL STATE and INDIANA. The game is slated to be played in Indianapolis. It should be a good one.

So, let's fire up the gas grill and do a Rotisserie Chicken.

This is similar to one we made a year or so ago.

ANOTHER GAME DAY CHICKEN

But hey give me a break. We need something simple and fast. According to the Weather Channel, we are all going to get blown into Georgia on Tuesday.

This is so easy. You put it on the grill and drink a beer.

Start with a COUPLE of ROASTER Chickens. Make sure you size them to fit your grill. Blot chicken with paper towels.

We used Salt & Pepper on one, and Grand Diamond Seasoning on the other

Remove the innards from the cavities.

Save these for making broth. (you are making broth ???)

Cut a half lemon in half. Put in cavity along with a slab of butter (seasoned butter 3 TBL)

Cut off the wing tips.

Put in fridge for 1 hour

Tie up the wings and legs

Baste with chicken broth and salt & pepper

Place on your Rotisserie

I turned gas to low and cooked for 2 hours. Baste them every 15 minutes. (I use Chicken Broth)

When internal temp of the chicken reaches 170 degrees, remove it from the Rotisserie.

Cover with foil and set it aside. Internal Temp should rise on it's own to 180

Make whatever sides you want. Salad? Baked tater? Your choice.

When you are ready, cut up the chicken and eat it.

Really easy, isn't it ??

Don't forget to save the bones so you can make broth. You are making broth, right?

The game was good, although Ball State lost 34-24 but that was not a surprise.

Thank god for HULU.

See you next week as the Gators return to the Swamp.

LIVE LONG AND PROSPER
