BAKED FISH IN MUSHROOM CREAM SAUCE

Hello boys and girls. Welcome back to another exciting edition of......... KILL IT, CUT IT UP AND COOK IT.

Today, we are going to whip up another GREAT casserole. Something right tasty, good for you, and best of all........

IT'S QUICK AND EASY !!!!

It's Baked Fish in a Mushroom Cream Sauce.

I am not a big sea food eater. When I was a kid I was spoiled by our family trips into Ontario
we would spend weeks fishing with our dad,

 water skiing,

and enjoying fresh caught walleye cooked on a HOT wood stove.

Since then I have had trouble finding fish that I liked. My dear wife has tried many recipes over the years and here is one that I truly LOVE.

And it proves my point that EVERYTHING tastes better with Mushrooms.....

Here is what you'll need to make this delicious dish

3 to 4 pieces of nice fish (of your choice)

¾ Cups of Chopped Onion

½ Stick of Salter Butter

8 oz of Miracle Rice      (Rinse and Drain well)
We are LOW Carbing so we used Miracle Rice. You can cook regular rice per the directions if you so desire.

12 OZ WHITE Mushrooms - chopped

¼ Cup of Wondra Flour
¼ Cup of Almond Flour

12 OZ of HOME MADE Chicken Stock

½ Cup of Dry White Wine
½ TSP FRESH Tarrigon

OK, you have all your ingredients set up, so let's get to the cooking part of today's episode.

Put the Butter in a pan, set on Medium heat

When melted, saute the Onions

When sauted, ADD the Mushrooms

When sauted, ADD the Tarrigon and ¼ Cup of the Wine
Add the Tarrigon and the Flour (both)
Stir well, and add the broth

Put the fish on paper towels and pat dry

Add a pinch of Salt & Pepper

Spray Veg. Oil to a baking dish and add the rice to the bottom

Add the rest of the wine to the pan

Put some of the sauce in the dish over the rice, add the fish

Pour the rest of the sauce over the top.

ADD 1 CUP of Cheddar Cheese on TOP

Bake at 350 for 30 minutes

While it cooks, let's have a refreshing adult beverage

This is sooooo  good  !!!! And I don't like fish so much.

Don't forget a healthy salad

This recipe was quick and easy, so it makes a great weeknight meal.

 Time for a cute puppy.....

Coming up soon on KICIU&CI,  the greatest Meatloaf recipe and the BEST Fried Chicken I have ever eaten........

See you then... and remember our MOTTO

EAT AT HOME  &  don't be a Craig.
