PORK ROAST FOR NEW YEARS

Hello, Boys and Girls. Welcome back to KILL IT CUT IT UP AND COOK IT.

It was a nice Holiday Season here in Central Florida highlighted by our Florida Gators WINNING the Orange Bowl in Miami against
Virginia.











The game was on late (8 PM) so rather than a Game Day Meal, we decided to share our New Years Feast with all of you.

It's ROAST PORK with Cole Slaw for dinner !!!!!!

This is SO EASY to make, as we again turn to our Slow Cooker.

But first, let's make the Cole Slaw.

Those of you that have been with us for the last three years, know how to make Easy Cole Slaw. We've done it here before.

So for the newbies, let's go back and revisit that Game Day recipe.

COLESLAW


I LOVE COLE SLAW !!! Really, it's my favorite thing and it so easy to make. Yes, you can buy the pre made crap if you are the laziest person on the planet. Go ahead. It was made days ago and has all kinds of preservatives. Not to mention the “additions” stores add. You have no idea what the hell you are eating.
You don't need a football day to make this. It goes with anything. So get your tush off of the couch, and make it fresh. It's not as hard as you think.

INGREDIENTS

1 CABBAGE
3 CARROTS
2 PEPPERS (I use Yellow and Red for color)
1 TSP SALT
1 CUP MAYONNAISE
1 TBL SPOON RICE WINE VINEGAR
PEPPER TO TASTE
¼ TSP WHOLE CELERY SEED
¼ TSP GROUND CELERY SEED
½ CUP SPLENDA
 
1 gallon paint (seriously) You can pick the color. Just make sure it is a full gallon.

Cut cabbage into quarters and remove center core

Clean carrots and grind with cabbage and peppers in food processor


Add salt and stir
Put in strainer it and place strainer in a bowl

Put strainer and bowl in the sink.
 
Put a plate on top of cabbage mixture and put the paint on top of the plate (leave it in the can) 
 


Let it sit for 2.5 hours. Have a beer while you wait
 

After 2.5 hours Remove paint and the plate and rinse the hell out of it. The slaw, not the paint.
 
 Put cabbage into a cloth bag
 

 
Squeeze the hell out of it to remove excess water. Get as much water removed as possible and place coleslaw into a bowl
 
ADD Mayo, Vinegar, and Splenda
 

Stir and taste.
Add pepper to taste.

Put in the fridge box until the game is over. You may need add more mayo. I did.

      Don't forget to be creative. Like Onions in your slaw? Why not? Be like Burger King. Do it your way. This stuff is great with Hot Dogs, Burgers and BEER !!
 
Let's get back to today 
 
First of all, since the Cole Slaw is ready, let's have a refreshing Adult Beverage.
 
(and you expected a Mic Ultra. This is my FAVORITE Mexican Beer)
 
 
Now lets get that Pork Roast a cookin'. 
 
This is so damn easy. You'll thank me later.
 
 I don't even have a written recipe for this one. That's how easy it is.

First you need the veggies.


I used one medium white onion chopped in quarters. 2 Carrots chopped in 1/4's. And a couple of Celery Stalks cut in 1/4's
 

 
 And one HUGE Pork Roast.
 
 

And one Slo-Cooker set to medium

 
Place your veggies on the bottom of the cooker



Add Porkie on top of the veggies
 

Close it up and let it cook for an hour 




Add salt and Pepper and any other seasoning you like,

(I used a bit of Cajun Seasoning. I could also have used some Grand Diamond as well.)

Let it cook for another 2 hours, then flip that sucker over.


Let it cook until the internal temperature reaches 150 degrees.
Use you handy dandy temperature thingy.

 
 
Place on a pan, cover with some foil and set aside while you make the highlight of any meal....... G R A V E Y !!!!!


Pour the broth through a Strainer to remove the veggie pieces. Pitch the veggies in your compost bin.

 Pour the broth into a fat separator. If you don't have one, leave it in the bowl and wait for the fat to come to the top.


Make sure Porkie is resting comfortably.


Put some of the fat into a pan.

 I added a can of mushrooms. Why you ask? Cause everything tastes better with MUSHROOMS.  And a cold beer.

 Saute the rooms for a couple of minutes.
 

Then add some WONDRA Flour. Just a bit at a time

 Stir like your life depended on it.... It does....


 Just add enough flour to make a nice roux.
 See what I mean ???

 Now add some broth and stir, stir, stir...

 Keep stiring....

 Doesn't that look good ???? You'll thank me later

Slice up your roast on place on a nice platter.

 Winner Winner Pork Roast Dinner.



Add the Gravy on top of your Pork Roast and dig in !!!!!

Well friends. Let me tell you how good this dinner was. It was really out of the park, and was so darn easy. Why go out to eat ????



Now we introduce a new feature on Kill It Cut It Up and Cook It.....
I like to call it :::::

IF I HAD A DO OVER 

About the only thing I would do different, would be maybe add the salt & pepper before I started cooking the Roast. No real reason, just to save a step later. And to avoid opening the Slo-Cooker.

I would also cut this Roast in half. It was way too big for just two of us. I got two GREAT dinners out of it. But still had tons of left overs. It does reheat well. (Even in the RF Box) You can also freeze it.

So, there you have it. A great way to start the New Year. Great SEC football, and a fantastic beer....I mean dinner.....

So what's up next??? I have a back log of recipes. Home made  Lemonade (The Adult Way) And the BEST fried chicken I have ever eaten. So we'll see you next time.
