CHICKEN AND RICE SOUP WITH LOOSE MEAT SANDWITCH FOR GAME DAY

OK, It's Game Day and hotter than..... 

How hot?? You ask ??

So hot that here in Florida, they're making cookies in the car !!!



But, we have air conditioning and a big screen TV and it's Football Game Day.

And beer !!!

 

Today Ball State takes on Fordham in a 2 PM game and Florida opens their home season with U.T. Martin.

On the menu today is a Low Carb Chicken and Rice Soup, along with a Low Carb loose meat Ham Sandwitch. (Sort of)

We made something similar a couple of years ago, but this time will be a bit different.

These are so damn easy to make, we're going to watch Football first, then have dinner before the second game.

It was a run away !!



 Let's get cooking !!!!!

BUT WAIT !!!!!  We need a cute doggie !!


and a beer



Now we can cook.....


CHICKEN AND RICE - LOW CARB

1 Rotisserie CHICKEN – CUT UP

2 CUPS CHICKEN BROTH

½ ONION – CHOPPED
3 CELERY STALKS - CHOPPED
1 CARROT – CHOPPED

¼ TSP THYME
½ TSP CELERY SEED
¼ TSP MARJORAM
¼ CUP CHOPPED PARSLEY



Saute the Onion, Celery and Carrots in some EVOO

Add the Broth and all the Spices

Stir, then add the Chicken



Heat well, but DO NOT Boil.

Place Miracle Rice in a drainer and RINSE

When rinsed, put in a bowl and Microwave on High for 1 min.

When rinsed, Microwave on High for 1 min.

When rinsed, Microwave on High for 1 min.
RINSE

Add some HOT water and let sit for 3 to 4 minutes
Drain and add to the Soup

Salt and Pepper to taste

Simmer on LOW for 30-40 minutes

Done !!! 

While the Soup is simmering, let's make the samwitches

But first.....  


Moving on


LOOSE MEAT SANDWITCH – LOW CARB
with shaved ham & SAUCE



1/2 POUND SHAVED HAM
1/4 CUP ONION
1/2 CUP GREEN PEPPER
1 CLOVE GARLIC (CHOPPED FINE)

ENOUGH MARINARA SAUCE TO COAT THE HAM. (BUT NOT TOO MUCH)

Saute Onions and Peppers in pan with EVOO


When translucent, add the Garlic and simmer about 60 seconds
Add the meat (I break it up, you do NOT want a big lump)


Add the Sauce and stir 

 
Heat mixture to desired temperature.


Salt and pepper to taste



If you get it too thin, you can add more meat.
If you get it too thick, you can add some broth or water or better yet MORE SAUCE

On a baking pan lined with NO STICK foil, place two pieces of LOW CARB bread


Cover with your meat mixture.


Cover with Mozzarella Cheese.



Place under your broiler for a couple of minutes (WATCH IT CAREFULLY)

When Cheese is nicely melted and starting to brown up, it is READY.


Serve with a refreshing Adult Beverage


 This was so simple and tasted GREAT. I am becoming a fan of the MIRACLE NOODLES, and RICE.

If you are not Low Carbing, you could use reguar noodles in the soup and a toasted bun for the samdwitch.

Either way works well.

SO its on to FOOTBALL



It was another Run Away !!!



All in all, a great way to spend a HOT day in Central Florida. Good football, Good food and Good air conditioning !!!!


FULL DISCLOSURE : SO I am in the kitchen cooking all this, and at the last second Penny says. "Why don't you throw some cheese on those samwitches?"
